(Cook Lobster for 20 seconds per oz)
(ie. 8 minutes per 1 and 1/2 pounds (24 oz))
Lobster with Bloody Mary Linguini
Pasta Sauce
1 Purple onion (diced) - 3 (fat) Garlic Cloves - 4 squirts of tabasco sauce - 6 squirts of Worcestershire sauce - 1 Tsp sugar - 1/2 cup Vodka (for lighter sauce use chicken stock) - 1 16oz can Tomatoes - Salt - Pepper
Linguini + topping
1 cup bread crumbs - EVO - 1/2 Cup of flat-leaf Parsley - Linguini for 4
Chili Pepper and Garlic Butter
1 chopped Chili Pepper (seeds removed) - 1 clove Garlic - 1/4 cup parsley
Chop onion and place in hot frypan with EVO and season with salt & pepper. Press the garlic cloves in and season with tabasco sauce. Add a pinch of celery salt and spice it up with Worcestershire sauce. Sprinkle with sugar, mix well and reduce. Deglaze with vodka (or stock). Add tomatoes and half the can of water. Bring to boil and cook out 6-8 minutes.
Start linguini topping by frying breadcrumbs in EVO (not too much or the bread will just absorb it), season and cook until golden brown. Chop flat-leaf parsley and add to breadcrumbs about 30 second before they’re ready to come off. Remove from heat and place into a small bowl until needed.
Roll 1 chili pepper in your have and shake to dislodge seeds. Cut end off and shake the seeds out. Chop the pepper and place into blender with parsley. Wiz for a few seconds to make a garlic, chili paste. Add about 3 oz of butter and mix in.
Take out pre-cooked lobster and lay on cutting board. Cut from cris-cross (behind the head) through centre of head. Turn around and cut through the lobster body and tail. Snap the legs and claws off and using blunt end of knife, crack them. Remove digestive track and spread butter mixture inside. Do the head as well and the claws. Put back in fridge to firm up.
Bring pot of salted water with EVO up to the boil and add pasta. Stir in pasta once it softens and cover 8-10 minutes. Drain pasta and place into sauce. Mix well and tip pasta & sauce onto plate. Cover with the bread crumbs.
Slap lobster down on smoking hot griddle (butter side down) 60 seconds. Turn and repeat. Remove and serve with linguini as side.
