Beer Battered Fish (for two)
1/2 cup flour - 1/2 tsp salt - 1/4 tsp pepper - 1/2 tsp garlic powder - 1/2 tsp Baking soda - 1 tsp Paprika - 1 small egg (lightly beaten) - 1/2 cup to 3/4 cup beer (roughly)
Double ingredients for 4 but just use 1 large egg
Heat oil in a deep fryer to 360ºF. Mix ingredients (if batter is thick, add more beer... should be like soup, not runny like water, but not too thick).
Rinse fish, pat dry, and dredge through flour. Place fish in batter and coat well. Hold up fish (by tail end) until it almost stops dripping and add to hot oil. Add slowly while moving fish back and forth so that fish floats. Cook for 2 and ½ minutes per side. Remove and place on paper towel for about 1 minute then serve.
