Beef Tenderloin Roast

Preheat oven to 350ºF (175ºC). Season Tenderloin and place into hot cast-iron frypan with EVO. Cut 3 garlic cloves in half and place into pan with 2-3 Thyme sprigs and 2 fresh Rosemary sprigs. Sear beef all around and place knob of butter on top. As butter melts, baste the loin with the butter, using a spoon. Pop into oven and cook for 15 minutes, or until desired done-ness.
