Sticky Pork with Apple Chutney
Super Brine
1 cup salt - 1 cup apple cyder vinegar - 2 Tbsp honey - 2 Tbsp golden brown sugar - 2 Tbsp maple syrup - 2 sprigs of Thyme leaves - crushed black peppercorns - Bay leaf - 3 garlic cloves
Cook ingredients till everything dissolves and pour over top of pork. Preheat oven to 350ºF (175ºC). Place chops in hot pan and sear pork on both sides then slip into oven for 10-12 minutes (until done mid-well).
Apple Chutney
2 Tbsp butter - 1 small onion (chopped) - pinch of cumin seeds - cubed apple pieces (skin off) from 2 apples - 2 oz White sugar - 2 oz apple cyder vinegar - pinch of Sage
Put ingredients in pot and cook medium heat until pork is done. Plate pork then top with chutney and serve.
