Sticky Lemon Chicken

Chicken Breasts, Olive Oil, 1 Head of Garlic (halved horizontally), few thyme sprigs, a splash of Sherry vinegar, freshly grated salt & pepper, 2 Tbsp Soy Sauce, 3 Tbsp honey, 1 lemon (thinly sliced), Italian flat-leaf parsley (chopped)

Heat olive oil in sauté pan. Season Chicken breasts. Brown chicken in pan on high heat, with garlic & thyme. Add a splash of Sherry vinegar, Soy & honey & reduce by half. Add a good splash (2 oz) of hot water & lemon slices, reduce until syrupy (10 minutes). Garnish with parsley.
