Spicy Mushy Peas
For regular Mushy Peas, do the same without the chilli

EVO - Knob of butter - 1 sliced chilli pepper (seeds optional) - 2 shallots (Diced) - 1 clove crushed Garlic - Frozen Peas - Fresh Mint 4-5 leaves - salt - pepper

In a hot frypan combine EVO, butter, shallots, chilli and garlic. Sweat that off. Place mint and peas into salted boiling water and blanch for 3-5 minutes, until soft. Drain then add the peas to the frypan, mix and season to taste.
