Crunchy Broccoli & Cauliflower gratin
Cauliflower - Broccoli - 2 egg yokes - Salt & Pepper - Hazelnuts - Grated Parmesan - Crème Fraîche
Heat oven to 400ºF (200ºC). Cut small Cauliflower and a head of Broccoli into florets. Add Cauliflower to large pan of boiling salt water and blanch for 1 minute. Tip in the Broccoli and cook for another 2 minutes. Drain well and put into a bowl. Beat generously 3/4 cup [175ml] Crème Fraîche with 2 egg yolks and some salt and pepper. Pour over the veggie’s and toss well. Pour into large oiled gratin dish. Scatter over 1/2 cup of crushed toasted hazelnuts and top with generous grating of Parmesan . Bake for 10 minutes (until top is golden brown).
