Sweet Potato Purée

2 Sweet Potatoes - 1 Tbsp Butter - 1/2 cup chicken stock - Salt & Pepper

Bake Sweet potato in Oven 40-45 minutes. Peel off skin. Place in blender with hot chicken stock (1/2 cup), salt, pepper, and butter. Wiz until smooth.
