Mashed with Caramelized Onions
One large onion - 4-5 medium sized Potatoes - 2 Tbsp of Butter - EVO - Salt - Pepper - 1/4 cup of Whipping Cream
Place pot of water on high heat and bring to boil, add salt & pepper. Peal and chop up potatoes into one inch cubes. Place potatoes in boiling water and set stove on Medium-High for 25 minutes.
Chop one large onion and place in hot frypan with Butter and EVO. Stir on medium-high heat until the onions turn medium to dark brown. Remove from heat.
Drain potatoes and briefly run cold water over them to remove starch. Place in bowl with cream, butter and onions. Mix with hand mixer for about 45-60 seconds and serve immediately / Serves 4
