Loaded Sweet Potato

Sweet potatoes - Sour Cream - Chives - 1 Bacon strip per potato - Salt- Pepper - Shredded Cheese - Butter - 1 oz of milk per potato (roughly)

Poke fork holes in Sweet Potatoes and bake for 50 minutes at 400ºF (205ºC). Next, cut tips off potatoes and slice in half. With a spoon, remove the insides of the potato and transfer to a bowl. Sprinkle EVO over the empty skins and place back in oven for 10 more minutes. Meanwhile, add milk, salt * pepper to the bowl and mix together with a hand mixer until smooth. Return the potato mixture to the skins and top with shredded cheese (mozzarella & Cheddar is nice), then bake for 15 more minutes. Remove, top with crumbled bacon and chives. Dip in a bowl of sour cream (with a fork) as you eat it!
