Crêpes with strawberries and whipped cream

Pancake Mix - Maple Syrup - Whipped Cream - Strawberries - Chocolate sauce, for drizzling, confectioners (icing) sugar for decoration

Add pancake mix to water in large bowl & mix thoroughly. Make the pancake batter quite runny. Heat frypan between medium/low & medium. Add butter when hot. When butter foams, add pancake mix. Wait for top of pancakes to dry and bubbles to break. Turn pancakes and add some butter in the centre. Each pancake should be 5" to 6" in diameter. When second side is done, place three pancakes per plate and don’t let too much of the pancake overlap. Add real maple syrup, then whipped cream (in a circular motion, from outside to centre - not too much) and add fresh cut strawberries atop the whipped cream. Drizzle chocolate sauce over all and scatter grated semi-sweet chocolate around the centre. Decorate outside of plate with confectioners’ sugar (icing sugar). Serve right away.
