Simple Chocolate Cake
3 cups of flour - 2 cups sugar - 1 cup cocoa - 1 & 1/2 Tsp baking powder - 1 Tsp baking soda - 1/2 Tsp salt - 2 large eggs - 1 cup milk - 1 cup cold coffee - 1/2 cup oil - 2 Tsp vanilla extract - 1 cap-full Brandy (optional)
Preheat oven to 350ºF (175ºC)
Add flour, sugar, cocoa powder, baking soda, baking powder together, & salt to large bowl and whisk together until combined.
In a separate bowl Whisk eggs, add milk, coffee, oil & vanilla and mix together until combined.
Add wet ingredients to the dry ingredients and whisk until it's a smooth cake batter.
Use parchment paper to line cake pan (or use cooking spray). Divide cake batter between two pans and place in oven for 30-35 minutes.
Let cool completely before adding icing.
