Frozen Peanut Butter Pie

Crust
1/4 cup butter - 1 cup chocolate wafer cookie crumbs
Filling
2/3 cup (full fat) Sour Cream - 2 Tbsp whipping cream - 3 Tbsp icing sugar - 2/3 cup Peanut Butter
Ganache
2 oz Semi-sweet chocolate - 1/4 cup whipping cream


Melt butter in metal bowl and pour over chocolate wafer cookie crumbs, in a large glass bowl. Mix butter in and place contents into 9" pie plate. Spread out crust. Use the bottom of a ramekin to apply pressure and pack crust nice and tight. Set if freezer for 20 minutes, to set.
In a large glass bowl, mix Sour Cream and whipping cream and mix. Mix in icing sugar well. The add Peanut Butter and whisk in until well combined. Spoon out, on top of crust that is already set and spread out evenly. Place back in freezer for 1 hour.
Using a double boiler, melt chocolate and whipping cream together in a metal bowl, mixing well. Let cool for 20 minutes. Add the chocolate to the top of the frozen peanut better pie. Add crushed peanuts around the edge of the pie and place back in freezer for 1 hour.
Remove pie from freezer 10 minutes before serving.
